A period of about 2 years passes. And Sultan Abdulaziz invites Napoleon to the palace. And Napoleon says that he cannot come to this visit himself, but that the queen will come to represent him. Hearing this, the Sultan is very excited and wants everything to be perfect. That’s why he doesn’t like any food that is made. All the chefs in the palace , try to make the sultan’s delight at the end. And the Sultan likes this dish very much. Thus, the name of the dish remains as Sultan’s delight ( Hünkar beğendi ) She also likes this dish when it is served to the queen. It is even said that she wants the recipe.

Ingredients
For meat
- 2 spoon oil
- 500 gram meat cubes
For sauce
- 2 spoon oil
- 1 spoon butter
- 1 onion
- 3-4 green peppers
- 1 dessert spoon tomato paste
- 1 dessert spoon pepper paste
- 3 cloves of garlic
- 2 tomatoes
- 1 glass of hot water
- salt
- ground black pepper
- chilli pepper
- thyme
For waiting
- 1.5 kg eggplants
- half lemon juice
- 1 dessert spoon salt
- water
For eggplant sauce
- 1.5 spoon butter
- 2 spoon flour
- 2.5 glasses of milk
- 1 glass of grated kashar cheese
- salt
- ground black pepper
Instructions
- Firstly , put the oil and meat cubes in a pressure cooker and brown it 2 minutes and close the lid of the pressure cooker and cook it
- Put oil and butter in a pot , chop the onion and add and brown them
- Add cooked meat on it and brown them
- Chop the peppers and add them
- Add tomato and pepper paste on them and continue to brown
- Chop the garlics and put them in the mixture
- Peel and chop tomatoes and add and brown them
- Add water , salt ,ground black pepper , chilli pepper and thyme and mix them
- Close the lid of the pot and cook it about 15-20 minutes
- Put the eggplants in a baking tray and grill them in a 200-250 degrees oven
- After grilling , put them in a bowl and wait for 15 minutes
- Peel the eggplants
- Put water , salt , lemon juice and eggplants in a bowl
- Take out eggplants from the bowl with a strainer and chop them into very small piceces
- Put butter in a pan and melt it and add flour and brown it
- Add the eggplants and brown them about 2 minutes
- Add milk little by little and stir them
- Add salt and ground black pepper and stir and cook them
- Add grated kashar cheese and stir it until kashar cheese melt
- Put the mixture in a plate and add the meat on the mixture , you can serve
